Ad Infinitum is a 5.5% pale ale brewed with single origin Scottish malt from Crafty Maltsters in Fife. It’s hopped with some very fine Tettnang from Locher Hopfen. It is, as are all our beers, open fermented, to bring out a fruitier fermentation profile from our house yeast which is repitched naturally from batch to batch. It’s then fermented and matured in oak barrels with our house Brettanomyces strains. Suitable barrels are chosen for blending and combined with fresh beer to encourage a refermentation in the bottle. It pours foamily with complex fruit aromas (lemon peel, stewed pear, apricot), to which the Brettanomyces lends a sherbet-like quality. There’s also a toasty, baguette-crust note and a slightly woody element suggestive of its oak aging. On the palate, dryness and bitterness drive drinkability.
